Happy Wednesday ya’ll! I’m thrilled Wednesday is here – for some reason, time seems to be crawling this week. Probably because I actually have a little time breathe! Oh well – it’s Wednesday which means it’s time for another installment of What I Ate Wednesday!

First, let’s start with this picture of me and the apple that was seriously half the size of my giant head. Impressive, right?

Kim Apple

Moving on…

Oatmeal and Banana

I started off last week feeling great and having high hopes for getting back on track after a week of eating out a lot. Oatmeal and bananas!

Quinoa Salad

I meal prepped and had this fantastic salad for lunch on Tuesday. Spinach, quinoa, chicken, tomatoes, black beans, and salsa – super flavorful and filling!

Water and Honey

Unfortunately, that’s when I got all out crazy sick. So I spent the rest of the week on the couch, wrapped in blankets like a burrito, watching Breaking Bad, and drinking hot water mixed with honey. I seriously think hot water and tea is the best medicine around…yum!

On Friday, after working half a day, I headed on down to Milwaukee. It was Jessi’s birthday last week, so I had to celebrate with my BFF. When I got home, my dad took pity on me and my hoarse voice and made me chocolate chip pancakes. Best dinner ever, amiright?!?!?! Mmhmmm.

Fro Yo

Anywho. On Saturday I met up with Jessi for a girl’s day! We saw Divergent, which overall I really liked. It started off a bit slow, but ended pretty strong! And can we talk about the actor who plays Tobias (am I too old to be saying that? #noshame). After the movie we went to the Cheesecake Factory and out for fro yo. It was fun to spend a day with my bestie!

Venison Roast

Saturday night Papa Dino struck again and made a fantastic venison roast with veggies. I’ve been eating leftovers all this week!

Eggs and BReakfast

Sunday morning I had poached eggs (covered in cheese, ha!) for the first team. They were pretty good. With a side of bacon because…well…why not?!

Finally (seriously, this post got long!) Papa Dino finished the weekend strong by grilling steaks, sautéing mushrooms AND making a grilled romaine salad. Have you ever had a grilled romaine salad? It’s so good – the lettuce gets a great smokey taste and with freshly grated parmesan cheese – WINNING COMBO!

Funfetti Cake
And for a bonus, Jessi sent me home with her homemade funfetti cake with homemade marshmallow frosting. No words, people. No words. Just pure sweet goodness!

It was a tasty, tasty week – anytime I get to go home and have my dad cook for me is a total win for me!

Your Turn!

  1. I can’t see Divergent until after Lent and it makes me really sad. :( My sister had A LOT to say about it, both good and bad, so I’m looking forward to it

Please give me that cake right now. I don’t know how you could make a more perfect cake.
